Ingredients

Main Ingredients

  • 1 lb Kielbasa A flavorful sausage, turkey kielbasa is a great leaner alternative.
  • 1 lb Green Beans Fresh or frozen; a great source of vitamins.
  • 1 Onion, diced Adds sweetness and complexity.
  • 2 cloves Garlic, minced Infuses the dish with aroma.
  • 2 cups Chicken Broth Low-sodium is best.

Seasonings

  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 teaspoon Red Pepper Flakes Adjust to taste.

Cooking Oil

  • 1 tablespoon Olive Oil For sautéing onions and garlic.

Instructions

Preparation

  • Begin by dicing your kielbasa into bite-sized pieces. Chop the onion and mince the garlic.
  • In a skillet, heat a dash of olive oil over medium heat. Add the diced onions and sauté for about 3-4 minutes until they become translucent. Stir in the minced garlic and sauté for an additional minute.

Cooking

  • Transfer your sautéed onions and garlic to the crockpot. Add kielbasa, green beans, and chicken broth. Season with salt, black pepper, and red pepper flakes.
  • Gently stir everything together to ensure the flavors meld.
  • Cover your crockpot and set it to low for 6-8 hours or high for 3-4 hours.
  • Once cooked, give it a good stir and serve hot.

Notes

For best results, layer the onions and garlic at the bottom of the crockpot. Fresh ingredients provide a better texture and flavor. Add seasonal veggies or swap kielbasa for chicken or tofu as desired. Store leftovers in the fridge for up to 4 days or freeze individual portions.
