  • 3 cloves garlic (minced; garlic powder works too in a pinch)
  • 1 cup beef broth (homemade if you have it – the love shows!)
  • 1 tablespoon Worcestershire sauce (for that umami kick)
  • 1 teaspoon paprika (bonus flavor!)
  • 1 cup sour cream (for creaminess; Greek yogurt can be a lighter substitute)
  • Salt and pepper (to taste)
  • Chopped parsley (for garnish; it adds a beautiful pop of color)

Preparation

  • In a skillet over medium heat, add a splash of oil and brown the beef stew meat on all sides for about 5-7 minutes.
  • Transfer the browned beef into your crockpot. Add the chopped onions, mushrooms, and minced garlic, stirring to combine.
  • Pour the beef broth and Worcestershire sauce into the crockpot, then sprinkle in the paprika, salt, and pepper. Give it a gentle stir, letting the ingredients mingle.

Cooking

  • Cover and set the crockpot to low for 6-8 hours or high for 3-4 hours.
  • 30 minutes before serving, stir in the sour cream.

Serving

  • Give it a final stir, taste for seasoning, and adjust if necessary. Serve hot, garnished with fresh parsley.

Notes

You can customize the ingredients as per your taste. Consider using lean sirloin or ground turkey for a lighter option.
