Preparation

  • Season the chicken breasts with salt and pepper. If you have time, sear them for 2 minutes per side in a hot skillet with olive oil.
  • Place the chicken in the bottom of your crock pot in a single layer.
  • In a bowl, whisk together heavy cream, chicken broth, tomato paste, minced garlic, oregano, basil, and red pepper flakes. Stir in sun-dried tomatoes and Parmesan cheese until slightly blended.

Cooking

  • Pour the creamy tomato mixture over the chicken, ensuring each piece is hugged by sauce.
  • Cook on low for 6–7 hours, or on high for 3–4 hours, until chicken is cooked through.
  • Remove the chicken to a cutting board and shred or slice to your preference.
  • Stir the sauce, taste, adjust seasoning, and return the chicken to the sauce.

Finishing Touch

  • Finish with a drizzle of olive oil and a scattering of fresh parsley or basil before serving.
