  • 8 oz mushrooms Button or cremini mushrooms recommended; any mushrooms can work.
  • 1 can cream of mushroom soup Low-fat or homemade versions can be used.
  • 1 cup sour cream Greek yogurt can be used as a lighter alternative.
  • 3 cloves garlic Freshly minced for aromatic flavor.
  • 1 medium onion Yellow or sweet onions preferred; shallots can be substituted.
  • 1 cup chicken broth Essential for braising the chicken.
  • 2 tbsp fresh thyme Or substitute with dried herbs.
  • to taste salt and pepper Adjust according to preference.

Preparation

  • Chop the onion and garlic, and slice the mushrooms.
  • Place the chicken in the bottom of the Crock Pot.
  • Spread the chopped onions, garlic, and mushrooms over the chicken.

Sauce Mixture

  • In a bowl, combine the cream of mushroom soup, sour cream, and chicken broth. Stir until smooth.
  • Gently pour the sauce over the chicken and vegetables, ensuring they’re well-coated.

Cooking

  • Sprinkle with salt, pepper, and herbs.
  • Cover and set the Crock Pot on low for 6 hours (or high for 3 hours).
  • Serve once cooked, shredding the chicken in the pot or removing it to serve.

Notes

For added flavor, consider searing the chicken before cooking. Fresh herbs added at the end enhance flavor.
