Preparation

  • Season both sides of the salmon fillets with salt and pepper. Set aside while you gather the other ingredients.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add the minced garlic, and sauté for about 30 seconds until fragrant.
  • Toss in the cherry tomatoes and cook until they begin to soften.
  • Incorporate the baby spinach into the skillet. Stir it around until wilted and vibrant.
  • Lower the heat, then pour in the heavy cream and add the Italian seasoning. Stir to combine and let it simmer.
  • Gently place the seasoned salmon fillets into the sauce. Cover the skillet and cook for about 5-7 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
  • Once cooked, sprinkle fresh basil over the dish for an aromatic finish.

Notes

Healthier swaps: Use Greek yogurt instead of heavy cream for a lighter option without sacrificing taste. For a spicy kick, incorporate a pinch of red pepper flakes into the cream mixture.
