  • 1 can cream of chicken soup Adds rich creaminess and depth; substitute with homemade chicken sauce for a lighter version.
  • 1 cup chicken broth To enhance the flavor; vegetable broth can also be used for a vegetarian twist.
  • 1 cup sour cream For a lovely tang; Greek yogurt works as a healthier alternative.
  • 1 tsp garlic powder A sprinkle of love to elevate the dish.
  • to taste salt A fundamental duo in any home cook’s pantry.

  • 1 tbsp olive oil To brown the chicken.
  • to taste chopped parsley For garnish, adds freshness and color.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large oven-safe skillet over medium heat.
  • Season the chicken breasts with garlic powder, salt, and pepper. Sear each side for about 4-5 minutes until golden brown.
  • Remove the chicken and set aside. In the same skillet, add the rice, stir it in with the leftover oil.
  • In a bowl, mix the cream of chicken soup, chicken broth, and sour cream until smooth. Pour this mixture over the rice.
  • Nestle the chicken back on top of the rice and cover the skillet tightly with a lid or aluminum foil.

Cooking

  • Bake in the preheated oven for 30-35 minutes.
  • When it’s done, take the skillet out and allow it to rest for 5 minutes.
  • Garnish with fresh parsley and serve.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze portions for up to 2 months. When reheating, warm gently in the microwave or in a skillet on low.
