  • 1 pound Shrimp Fresh or thawed, adds a sweet and savory element.

  • 4 ounces Cream cheese Creates a rich, creamy sauce.
  • 1 cup Vegetable broth Adds depth; chicken broth can work.
  • 1/2 cup Parmesan cheese For a salty, cheesy finish.
  • 2 cups Spinach Adds color and nutrition; can swap with kale.
  • 2 tablespoons Olive oil For sautéing.
  • 1 tablespoon Butter To enrich the flavors.

Preparation

  • Bring a pot of salted water to a boil and cook the orzo until al dente. Drain and set aside.
  • In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
  • Add shrimp to the skillet, season lightly with salt and pepper, and cook for 3-4 minutes until pink and opaque. Remove shrimp and set aside.
  • In the same skillet, melt another tablespoon of butter and add minced garlic, swirling until fragrant.
  • Stir in cream cheese and vegetable broth until melted and smooth.
  • Add cooked orzo and shrimp back into the skillet along with fresh spinach, stirring until the spinach wilts.
  • Grate Parmesan cheese over the mixture, taste, and adjust seasoning if needed. Serve warm with more cheese and a sprinkle of black pepper.

Notes

For variations, add honey garlic shrimp for sweetness, sun-dried tomatoes for tang, or red pepper flakes for heat. Can be served with a side salad or crusty bread.
