Ingredients
  

Pasta and Shrimp

  • 8 oz fettuccine pasta Feel free to substitute with whole wheat or gluten-free pasta.
  • 1 lb medium shrimp, peeled and deveined Try using scallops for a luxurious twist.

Sauce Ingredients

  • 2 tbsp olive oil Or half olive oil and half butter for extra richness.
  • 3 cloves garlic, minced Because garlic is life!
  • 1 cup heavy cream Or a healthier option such as coconut milk.
  • 1/2 cup grated Parmesan cheese Substitute with nutritional yeast for a vegan option.
  • 1 tsp Italian seasoning Or fresh herbs like basil and parsley for vibrant flavor.
  • Salt and pepper to taste
  • Fresh parsley, chopped For garnish.

Preparation

  • In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve about 1/2 cup of the pasta water, then drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the shrimp and season with salt, pepper, and Italian seasoning. Sauté for 2-3 minutes or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

Cooking

  • In the same skillet, add a little more olive oil or butter if needed, then add the minced garlic. Allow the garlic to sauté for about 30 seconds until fragrant; be careful not to burn it!
  • Slowly pour in the heavy cream, stirring to combine. Bring it to a gentle simmer, allowing the creamy mixture to thicken for about 3-5 minutes. Add in the reserved pasta water to achieve your desired consistency, and stir in the Parmesan cheese.
  • Toss the cooked fettuccine and shrimp into the creamy sauce, mixing until thoroughly coated. Adjust seasoning as needed.

Serving

  • Plate your Creamy Shrimp Fettuccine Pasta, garnish with fresh parsley, and enjoy immediately!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, warm the pasta gently in a skillet over low heat, stirring in a splash of cream or reserved pasta water to loosen the sauce.
