Preparation

  • In a large pot, melt the butter over medium heat.
  • Add the chopped onion and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and sauté for an additional 1-2 minutes, or until fragrant.
  • Toss in the diced potatoes and pour in the broth.
  • Bring the mixture to a gentle boil, then reduce the heat to a simmer.
  • Let it cook uncovered for about 15-20 minutes, or until the potatoes are tender.

Blending and Finishing

  • Using an immersion blender, carefully puree the soup until smooth.
  • Stir in the heavy cream, and season with salt and pepper to taste.
  • Ladle into bowls and add your favorite toppings. Enjoy while hot!

Notes

For healthier swaps, replace heavy cream with Greek yogurt or use half-and-half. Add a pinch of cayenne pepper for a spicy kick and consider adding seasonal veggies like leeks or carrots for a twist.
