Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat.
  • Add diced onions, chopped celery, and minced garlic. Sauté until fragrant and the onions are translucent, about 5 minutes.
  • Add your Italian sausage, breaking it apart as it cooks. Brown until it’s no longer pink; this should take about 5–7 minutes.
  • Toss in the chopped carrots and cook for another 3 minutes, mixing everything together.
  • Add the chicken broth and bring to a gentle simmer. Let it steep for 5 minutes to build flavors.
  • Stir in the cream or half-and-half, then sprinkle in the freshly grated Parmesan cheese. Mix until the cheese has melted.
  • Toss in the spinach or kale, letting it wilt for just a couple of minutes.
  • Taste your soup and season with salt, pepper, and Italian seasoning to your liking. Serve hot.

Notes

For a lighter option, use turkey sausage or low-fat cream. This soup freezes beautifully and can be stored for up to 3 months.
