4large russet potatoeswashed, partially peeled*, and cut in half widthwise
¼cupvegan butter
2cupsunsweetened non-dairy milk
1tbspsalt
¼tspfreshly ground black pepper
chivesfor garnish
Instructions
Bring a large pot of salted water to a boil. Add potatoes and cook for 15-20 minutes, until fork tender. Drain the potatoes and transfer back into the pot.
Using a masher, mash the potatoes just enough to break them down. Add the butter and mash until it's melted. Whisk in the nondairy milk, this will fluff up the potatoes. Add the salt and pepper. Taste for seasoning adjustments.
Transfer to a serving dish and garnish with chives. Done! Yummy mashed potatoes just like that, enjoy!
Notes
*I like to keep some potato skins in my mashed potatoes because I think it adds a nice flavor and texture, but this is optional.
