For the Sides

Preparation

  • Start by peeling and cutting the potatoes into quarters. Slice the carrots and mince the garlic.

Cooking

  • Place potatoes in a pot, cover with water, and bring to a boil. Cook until tender (about 15 minutes).
  • While the potatoes are boiling, heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Season chicken breasts with salt and pepper, then add them to the skillet. Cook each side for about 6 minutes until golden brown.
  • Remove chicken and set aside. In the same skillet, add remaining butter and garlic. Sauté until fragrant, about 1 minute. Pour in chicken broth and simmer, scraping up any browned bits.
  • Lower the heat and mix in heavy cream, chopped herbs, and a pinch of salt and pepper. Return the chicken to the sauce, letting it simmer for 5 minutes until cooked through.
  • In a small saucepan, add sliced carrots and honey with a splash of water. Cover and cook over low heat for about 5-7 minutes until tender.
  • Drain the potatoes, then mash them with a splash of cream and a little butter. Season to taste with salt and pepper.

Serving

  • Plate the creamy herb chicken alongside generous servings of fluffy mashed potatoes and honey glazed carrots. Take a moment to savor the aroma before diving in!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can freeze the chicken and sauce for up to a month. Reheat gently, adding a splash of broth or cream to restore creaminess.
