Cooking the Gnocchi

  • Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside, keeping them warm.

Making the Sauce

  • In a large skillet, drizzle olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Stir in the fresh spinach and cook until wilted.
  • Pour in the heavy cream and stir to combine with the spinach and garlic. Season with salt and pepper.
  • Gently fold in the crumbled feta cheese until partially melted.
  • Add the cooked gnocchi to the skillet and toss together.
  • Serve hot, garnished with additional feta or fresh herbs if desired.
