Chicken

  • 2 pieces boneless, skinless chicken breasts You can substitute with shrimp or tofu for a lighter option.

Sauce Ingredients

  • 3 tablespoons olive oil Adds richness; avocado oil works too.
  • 4 large cloves garlic, minced Freshly minced for the best flavor; garlic powder can be used in a pinch.
  • 1 cup heavy cream For a luxurious sauce; swap for half-and-half or a dairy-free alternative like coconut milk for a lighter version.
  • 1/2 cup grated parmesan cheese Freshly grated is ideal; nutritional yeast can be used for a dairy-free cheese substitute.
  • Salt and pepper, to taste Essential for balancing flavors.
  • Fresh parsley, chopped (optional) For garnish; basil or thyme also works beautifully.

Instructions
 

Cooking the Pasta

  • In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Cooking the Chicken

  • In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper. Add to the skillet and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and let rest for a few minutes, then slice into strips.

Making the Sauce

  • In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  • Reduce the heat to low and pour in the heavy cream, stirring to combine. Gradually add the parmesan cheese, whisking until melted and the sauce is smooth. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

Combining Everything

  • Add the sliced chicken and cooked pasta to the sauce. Toss to coat, adding additional seasoning if needed.

Serving

  • Garnish with fresh parsley and a sprinkle of parmesan for an extra touch. Revel in the delicious aroma filling your kitchen!

Notes

This dish stores beautifully! Transfer any leftovers to an airtight container and refrigerate for up to 3 days. For freezing, it’s best to store the pasta and sauce separately; it can be frozen for up to 2 months. When ready to enjoy, thaw overnight in the fridge and reheat gently on the stovetop, adding a splash of cream or pasta water if needed.
