Ingredients

Main ingredients

  • 8 oz Pasta Any shape will do.
  • 2 cups Fresh Corn Sweet and crunchy; frozen corn can be used if fresh is not available.
  • 1 cup Heavy Cream For a lighter twist, you can replace it with Greek yogurt.
  • 3 cloves Garlic Minced for flavor.
  • 2 tablespoons Olive Oil For sautéing the garlic.
  • ½ cup Parmesan Cheese Grated, for added flavor.
  • to taste Salt
  • to taste Pepper
  • optional Fresh Basil Chopped for garnish; can substitute with parsley.

Instructions

Cooking the Pasta

  • In a large pot, bring salted water to a boil. Add your pasta and cook according to package directions until al dente. Reserve about ½ cup of pasta water, then drain.

Sautéing Garlic

  • In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Adding Corn

  • Stir in the fresh corn and cook for about 3–4 minutes, allowing it to soften and sweeten.

Creating the Sauce

  • Pour in the heavy cream, stirring to combine, and let it simmer for a few minutes until the cream thickens slightly.

Mixing Pasta and Sauce

  • Add the drained pasta to the skillet, tossing it in the creamy corn sauce. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.

Finishing Touches

  • Remove from heat and stir in grated Parmesan cheese. Season with salt and pepper to taste.

Garnishing and Serving

  • Sprinkle fresh basil on top before serving if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. When reheating, add a splash of cream or pasta water to maintain the sauce's consistency.
