Preparation

  • In a large skillet over medium heat, add a splash of oil. Throw in the diced onion and minced garlic, sauté until translucent, about 3 minutes.
  • Add the ground beef to the skillet. Break it apart with a spatula and cook until browned, around 5-7 minutes. Season with salt and pepper.
  • Once the beef is cooked, toss in the sliced mushrooms. Stir continuously for another 4-5 minutes until the mushrooms are tender and golden.
  • Pour in the beef broth and Worcestershire sauce. Bring to a gentle simmer and let it reduce slightly, around 5 minutes.
  • Take the skillet off the heat and fold in the sour cream until it creates a beautifully luscious sauce.
  • While the sauce is setting, cook the egg noodles in a separate pot according to package instructions. Drain and add to the beef mixture, stirring to combine.
  • Pour everything into a greased 9x13 inch casserole dish. Sprinkle the cheese on top.
  • Preheat your oven to 375°F (190°C). Bake for about 15-20 minutes until the cheese is bubbly and golden.

Notes

Consider using low-fat sour cream or Greek yogurt for a lighter option. You can add seasonal vegetables like spinach or butternut squash for a fresh twist. Incorporate fresh herbs towards the end for increased flavor.
