  • 4 pieces Boneless and skinless chicken breasts
  • 8 oz Cream cheese Softened
  • 1 cup Fresh herbs (parsley, thyme, or basil) Chopped
  • 2 cloves Garlic Minced
  • 2 tbsp Olive oil For cooking
  • to taste Salt and pepper

Preparation

  • In a mixing bowl, combine the softened cream cheese, minced garlic, and chopped fresh herbs. Season with salt and pepper to taste.
  • Carefully cut pockets into each chicken breast, ensuring not to slice all the way through.
  • Generously spoon the cream cheese mixture into each chicken pocket, ensuring it's filled well.
  • Use toothpicks to close the openings if needed. Heat olive oil in a skillet over medium-high heat.
  • Sear the chicken for about 3-4 minutes on each side until golden brown.
  • Transfer the chicken to a preheated oven at 375°F (190°C) and bake for 20-25 minutes until cooked through and juices run clear.

Notes

For added nutrients, mix in sautéed spinach into the cream cheese filling. You can also incorporate shredded mozzarella or cheddar for an indulgent twist. Experiment with fresh herbs such as dill or oregano.
