  • 1 pound Italian sausage or turkey sausage for a lighter version
  • 4 cups chicken broth or veggie broth for a vegetarian option
  • 3 medium potatoes, diced Yukon Gold or red are perfect
  • 2 cups kale, chopped fresh or frozen
  • 1 medium onion, diced for aromatic flavor
  • 2 cloves garlic, minced essential for flavor enhancement
  • 1 teaspoon dried thyme for earthy note
  • Salt and pepper to taste

Preparation

  • In a skillet over medium heat, cook the sausage until it’s browned and crumbles nicely.
  • In your crockpot, combine the browned sausage, chicken broth, diced potatoes, onion, garlic, thyme, salt, and pepper. Stir well.
  • Add the kale, folding it gently into the mix.
  • Cover and set your crockpot on low for 6-7 hours or high for 3-4 hours.
  • Once it’s done, give it a final stir, taste for seasoning, and adjust as needed. Serve hot.

Notes

For variations, consider adding chopped carrots or celery, and for creaminess, stir in a splash of cream or sour cream before serving. Store leftovers in airtight containers.
