  • 1 cup heavy cream Coconut milk is a great dairy-free substitute.
  • 1 tsp salt Adjust to taste.
  • 1 tsp black pepper Adjust to taste.
  • 2 tsp Italian herbs Use oregano or basil.

Preparation

  • In a pan over medium heat, brown the Italian sausage until it’s nicely browned but not fully cooked.
  • Chop the potatoes, carrots, and onion into bite-sized pieces. Mince the garlic.

Cooking

  • Layer the browned sausage, chopped vegetables, and kale in the crockpot.
  • Pour the chicken broth into the pot along with the heavy cream.
  • Sprinkle in salt, pepper, and your Italian herbs—stir gently to combine.
  • Cover the crockpot and cook on low for 6 hours or on high for 3 hours.
  • When done, scoop the soup into bowls and enjoy!

Notes

For a healthier twist, consider using turkey or chicken sausage. Use a crockpot liner for easy cleanup and add more veggies as desired.
