  • 1 cup shredded cheddar cheese Sharp cheddar adds wonderful depth; feel free to mix in some Monterey Jack.
  • 1 tablespoon olive oil This helps sear the chicken perfectly.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, cook the bacon until crispy. Remove and crumble. Keep 1 tablespoon of bacon grease in the pan.

Cooking

  • Season chicken breasts with salt and pepper. In the same skillet, add olive oil and sear chicken for about 5 minutes on each side until golden.
  • Pour BBQ sauce over the chicken in the skillet and let it simmer for a few minutes.
  • Sprinkle crumbled bacon evenly over the chicken, followed by the shredded cheddar.
  • Transfer the skillet to the oven and bake for about 10-15 minutes until the cheese is melted and bubbly.

Garnish and Serve

  • Remove from the oven and garnish with chopped green onions or cilantro.

Notes

Leftovers can be stored in an airtight container for up to 3 days. To freeze, wrap tightly and freeze for up to 2 months. For reheating, warm in a 350°F (175°C) oven.
