Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes until the veggies soften and turn golden.
  • Stir in the minced garlic and let it cook for an additional minute until fragrant.
  • Pour in the rice and stir it into the veggie mixture, letting it toast slightly for about 2 minutes.
  • Add the chicken broth and tomato sauce to the skillet, and sprinkle in the Cajun seasoning.
  • Stir everything together and bring it to a gentle boil.
  • Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes until the rice is cooked and has absorbed all the liquid.
  • Remove from heat, let it sit for 5 minutes, then fluff with a fork and serve!

Notes

For a spicier kick, add cayenne pepper or crushed red pepper flakes. You can also stir in cooked chicken, shrimp, or tofu for added protein.
