Preparation

  • Rinse and soak 1 cup of jasmine rice under cold water until the water runs clear. Let it soak for about 10 minutes, then drain well.
  • In a medium pot, combine the soaked rice, 1 cup of coconut milk, 1 cup of water, and 1/2 teaspoon of salt. Stir gently to mix.

Cooking

  • Bring the mixture to a gentle boil over medium heat. Reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the liquid is absorbed and the rice is tender.
  • In a small skillet, heat a splash of oil over medium heat. Add 2 cloves of minced garlic and sauté until fragrant, about 1 minute.
  • Stir in 1 tablespoon of chili flakes and a pinch of salt. Cook for another minute, allowing the flavors to meld. Remove from heat and set aside.
  • Once your rice is cooked, fluff it with a fork and serve in bowls. Top generously with the spicy chili crisps and sliced scallions for garnish.

Notes
