  • 2 lb Fresh Tomatoes Look for vine-ripened tomatoes for the best flavor. Canned tomatoes can also work.
  • 1 cup Fresh Basil Use fresh basil for best flavor, or half the amount if using dried.
  • 4 cloves Garlic Minced garlic adds depth to the flavor.
  • 1 medium Onion A sweet yellow onion gives a nice base flavor.
  • 4 cups Vegetable Broth Homemade stock adds a richer taste.
  • 2 tbsp Olive Oil Good quality olive oil enhances richness.
  • to taste Salt and Pepper Adjust according to taste.

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic, cooking for another minute until fragrant.
  • Coarsely chop the fresh tomatoes and add them to the pot, cooking for 10-15 minutes until they break down.
  • Add the vegetable broth and bring the mixture to a gentle simmer. Cook for about 15 minutes, stirring occasionally.
  • Using an immersion blender, blend the soup until smooth, or transfer to a traditional blender in batches.
  • Stir in the torn fresh basil leaves, salt, and pepper. Allow to cook for an additional 5 minutes.
  • Ladle the soup into bowls and garnish with a drizzle of olive oil or freshly grated Parmesan cheese if desired.

Notes

For a creamy version, add a splash of heavy cream or sour cream before serving. You can also add a pinch of red pepper flakes for heat or toss in some chopped carrots or celery for added nutrition.
