Preparation

  • Soak the beans overnight in water, or use the quick soak method (boil for 1 hour and let sit).
  • In a large pot, heat a tablespoon of olive oil over medium heat. Add chopped onions and bell pepper. Stir and sauté until softened, about 5 minutes.
  • Add minced garlic and cumin, cooking for another minute.
  • Drain and rinse the beans if canned or soaked. Add them to the pot along with vegetable broth and the bay leaf.
  • Bring to a boil, then reduce heat and let it simmer for 45 minutes.
  • Remove the bay leaf. Blend a portion of the soup for creaminess, leaving some beans whole for texture.
  • Stir in lime juice, seasoning with salt and pepper to taste.

Notes

Leftovers keep well in the fridge for about 4-5 days and freeze beautifully for up to 3 months. Store in airtight containers.
