Preparation

  • In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside, adding a splash of olive oil to prevent sticking.

Cooking

  • In the same pot, heat a drizzle of olive oil over medium heat. Add the ground beef (or turkey) and onion. Cook until the meat is browned and the onions are soft and translucent, about 5-7 minutes.
  • Stir in the chopped garlic and cook for another minute until fragrant.
  • Add the kidney beans, diced tomatoes (with juice), chili powder, cumin, salt, and pepper. Stir to combine everything, simmer for 3-4 minutes until heated through.
  • Lower the heat and stir in the cooked macaroni and 1.5 cups of cheddar cheese, mixing until everything is well-coated and the cheese is melty.
  • Scoop generous portions into bowls, sprinkle with the remaining cheddar cheese, and let it melt slightly before garnishing with green onions or cilantro.

Notes

For a healthier version, substitute ground turkey for beef and use whole wheat pasta. You can also add spinach or other greens for additional nutrition and color. To enhance spiciness, incorporate jalapeños or a splash of hot sauce. Experimenting with different cheese varieties like Monterey Jack or Pepper Jack can add a fun twist.
