  • Season the chicken breasts generously with salt, pepper, and thyme.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the chicken and cook for about 5-7 minutes on each side, until golden brown and cooked through.
  • Remove the chicken from the skillet and let it rest.
  • In the same skillet, add the butter and once melted, toss in the minced garlic and sliced mushrooms.
  • Sauté for 2-3 minutes until the mushrooms release their moisture and become tender.
  • Stir in the fresh spinach and allow it to wilt for about a minute.
  • Slice the rested chicken and return it to the skillet, mixing everything gently.
  • Squeeze lemon juice over the top for that refreshing kick.
  • Plate the chicken dish hot and enjoy the aromas!

Notes
