  • 2 cups Mixed Vegetables Choose your favorites! Carrots, bell peppers, and snap peas work beautifully.

Flavor Enhancers

  • 4 cloves Garlic (minced) Fresh garlic is preferred over pre-minced.
  • ¼ cup Soy Sauce Low-sodium soy sauce can be used for a lighter option.
  • 2 tbsp Sesame Oil Toasted sesame oil is best; olive oil is a decent alternative.
  • 1 tbsp Cornstarch Used to thicken sauces; can also use arrowroot for a gluten-free option.
  • Green Onions (for garnish) Adds a sprinkle of freshness on top.

Preparation Steps

  • Boil the lo mein noodles according to package instructions until al dente. Drain and set aside.
  • In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the chicken and sauté until golden brown and cooked through, about 5–7 minutes.
  • Add the minced garlic to the pan and sauté for about 30 seconds until fragrant.
  • Stir in the mixed vegetables and stir-fry for around 3–4 minutes until vibrant and just tender.
  • In a small bowl, whisk together soy sauce, cornstarch, and a splash of water until smooth. Pour this mixture into the skillet.
  • Gently toss in the cooked noodles, ensuring they are well coated in the sauce.
  • Cook for an additional 2–3 minutes to meld the flavors together. Serve hot, garnished with green onions.

Notes

For extra kick, add hoisin sauce or chili flakes. Dietary swaps include tofu for chicken or making it gluten-free with rice noodles and tamari sauce. Serve with spring rolls and iced green tea for a complete meal.
