Ingredients

  • 8 ounces rotini or penne pasta Feel free to use whole wheat for a healthier option.
  • 2 cups cooked chicken breast, diced Grilled or rotisserie chicken works wonderfully.

Vegetables

  • 2 cups chopped romaine lettuce For that fresh crunch.
  • 1 cup cherry tomatoes, halved These add a pop of color and sweetness.

Dressing and Toppings

  • ½ cup Caesar dressing Store-bought or homemade.
  • cup grated Parmesan cheese Shredded or grated works.
  • ½ cup croutons For that satisfying crunch.
  • Fresh ground pepper To taste.

Instructions
 

Cooking Pasta

  • Bring a large pot of salted water to a boil.
  • Add your chosen pasta and cook according to package instructions until al dente.
  • Drain and rinse under cold water to prevent sticking.

Combining Ingredients

  • In a large bowl, combine the diced chicken, chopped romaine lettuce, and halved cherry tomatoes.
  • Once the pasta is cool, gently fold it into the chicken and veggie mixture.

Dressing the Salad

  • Pour in the Caesar dressing and toss until everything is well-coated.

Serving

  • Sprinkle grated Parmesan cheese on top, followed by the croutons.
  • Serve immediately, or chill in the fridge for about 30 minutes for the flavors to meld.

Notes

Consider adding bell peppers or spinach for more color. Use Greek yogurt in place of some dressing for a lighter option. You can also use shrimp or chickpeas instead of chicken.
