Main Ingredients

  • 2 cups cooked rice white or brown works!
  • 2 cups broccoli florets fresh or frozen
  • 2 cups cooked chicken, shredded rotisserie chicken is a great shortcut
  • 1 can cream of chicken soup can use a low-sodium option
  • 1 cup shredded cheddar cheese substitute with mozzarella or a dairy-free cheese
  • ½ cup milk almond milk can be used for a dairy-free option

Spices

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the cooked rice, broccoli, shredded chicken, cream of chicken soup, milk, garlic powder, onion powder, and half of the cheese. Mix thoroughly until everything is evenly coated.
  • Add in salt and pepper to suit your taste.
  • Spoon the mixture into a greased 9x13-inch baking dish, spreading it evenly across the bottom.
  • Sprinkle the remaining cheese on top.
  • Place the dish in the preheated oven and bake for about 30 minutes, until everything is heated through and the cheese is bubbly and golden brown.
  • Remove from the oven and let your casserole sit for about 5 minutes before serving.

Notes

Try adding sliced mushrooms or swapping broccoli for spinach or bell peppers. Use brown rice or cauliflower rice for a healthier base.
