Ingredients

Main Ingredients

  • 2 cups cooked chicken Shredded or diced, rotisserie chicken works great.
  • 2 cups broccoli florets Fresh is best, but frozen can be used.
  • 1 can (10.5 oz) cream of chicken soup For a creamy base; homemade is a great option.
  • 1 cup sour cream Greek yogurt can be a healthy substitute.
  • 1 cup shredded cheddar cheese Sharp cheddar gives a flavor boost; feel free to double this.
  • 1 cup cooked rice Brown rice or quinoa can be used for a gluten-free option.
  • 1 teaspoon garlic powder Fresh garlic can be used for more depth.
  • Salt and pepper to taste Essential to enhance flavors.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Steam the broccoli florets for about 3 minutes until vibrant and tender. Drain and set aside.

Mixing

  • In a large mixing bowl, combine the cream of chicken soup, sour cream, garlic powder, salt, and pepper. Stir until smooth.
  • Add the cooked chicken, broccoli, rice, and one cup of cheddar cheese to the mixing bowl. Stir everything together until evenly coated.

Baking

  • Pour the mixture into a greased 9x13 inch baking dish.
  • Sprinkle the remaining cup of cheddar cheese generously on top.
  • Bake for about 30 minutes or until bubbly and golden.

Serving

  • Let it cool for a few minutes before serving.

Notes

You can substitute whole grain or cauliflower rice for a healthier option. Add seasonal veggies for extra flavor. A sprinkle of paprika or crushed red pepper can enhance the taste. For vegetarian options, consider chickpeas or turkey instead of chicken.
