Preparation

  • Rinse the asparagus and trim off any tough ends. Season chicken breasts with salt and pepper.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add asparagus and cook for about 3-4 minutes until tender, then remove and set aside.
  • In the same skillet, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side until golden brown and fully cooked.
  • Reduce heat and spread cream cheese over chicken. Sprinkle grated cheddar on top, cover the skillet, and cook for an additional 2-3 minutes until cheese melts.
  • Gently fold sautéed asparagus into the skillet with the chicken and cheese, stir gently, and serve hot.

Notes

Consider using different vegetables like spinach or bell peppers. You can also grill the chicken for a healthier option.
