  • 1 lb Boneless, skinless chicken breasts Perfect for grilling or baking.
  • 1 cup Tzatziki Sauce A creamy blend of yogurt, cucumber, garlic, and herbs.
  • 1 cup Rice or Quinoa Choose brown rice for added fiber or quinoa for a healthy twist.
  • 1 cup Cherry Tomatoes Adds color and juiciness.
  • 1 Cucumber, diced For a crisp crunch.
  • 2 tbsp Olive Oil Adds flavor and moisture.
  • 1 tbsp Lemon Juice Brightens the dish.
  • Salt and Pepper Essential for seasoning.

Instructions
 

Preparation

  • In a bowl, mix olive oil, lemon juice, salt, and pepper. Coat the chicken breasts in this mixture and let them marinate for about 10 minutes.
  • While the chicken marinates, cook your choice of rice or quinoa according to package instructions.

Cooking

  • Preheat a grill or stovetop skillet over medium-high heat.
  • Once hot, place the chicken on the grill or skillet and cook for about 6–7 minutes on each side, or until the internal temperature reaches 165°F.
  • While the chicken cooks, prepare the tzatziki by mixing Greek yogurt, diced cucumber, minced garlic, a pinch of salt, and dill in a bowl. Set aside.
  • Once the chicken is done, let it rest for a few minutes before slicing.

Assembly

  • Assemble your bowls starting with a base of rice or quinoa, topped with sliced chicken, a scoop of tzatziki, cherry tomatoes, and diced cucumber.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Chicken can also be frozen; thaw in the fridge before reheating. Add fresh herbs or roasted veggies for extra flavor.
