Cooking Steps

  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for 5-7 minutes or until golden brown and fully cooked.
  • Toss in the minced garlic and chopped bell pepper. Sauté for 2-3 minutes until fragrant and tender.
  • Add the pineapple chunks to the skillet along with the soy sauce. Stir everything together and let it cook for another 3-4 minutes, allowing the flavors to meld beautifully.
  • Fold in the cooked rice, making sure it’s evenly coated with the mixture. Cook for an additional 2-3 minutes, stirring frequently.
  • Remove from heat, plate it up, and serve hot!

Notes

For a vegetarian option, swap chicken for tofu or chickpeas. Use brown rice for a heartier experience. Store leftovers in an airtight container in the fridge for up to three days.
