  • 300 g Fettuccine Pasta This classic type of pasta holds the sauce beautifully.
  • 1 pound Chicken Breast Cut into bite-sized pieces, can substitute with shrimp or veggies.

Sauce Ingredients

  • 2 tablespoons Olive Oil For sautéing, can swap with butter.
  • 3 cloves Garlic Minced, can use garlic powder in a pinch.
  • 1 cup Heavy Cream Can use half-and-half or Greek yogurt for a lighter version.
  • 1 cup Parmesan Cheese Freshly grated is best, can use Pecorino Romano.
  • Salt and Pepper To taste.
  • Chopped Parsley For garnish.

Preparation

  • In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the chicken pieces, seasoning them with salt and pepper. Cook until golden brown and cooked through, about 5–7 minutes. Remove and set aside.

Sauce Creation

  • In the same skillet, lower the heat slightly. Add minced garlic and sauté until fragrant, about 30 seconds.
  • Pour in the heavy cream, stirring constantly. Allow it to simmer gently for 2–3 minutes, thickening just a bit.
  • Stir in the grated Parmesan cheese until melted and the sauce becomes creamy and smooth.

Final Assembly

  • Add the cooked fettuccine and sautéed chicken to the skillet. Mix well to ensure everything is coated in that luscious sauce.
  • Adjust seasoning with more salt and pepper if needed. Serve hot, garnished with chopped parsley.

Notes

Tips: Add steamed broccoli or spinach for nutrition. Adjust cream amount for desired richness.
