Cooking

  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey, cooking until browned and fully cooked, about 5-7 minutes.
  • Stir in the diced tomatoes, tomato sauce, and vegetable broth. Mix well, allowing the flavors to meld together, around 5 minutes.
  • Add broken lasagna noodles to the pot. Cover and let simmer for about 10 minutes, stirring occasionally until noodles are al dente and the soup thickens.
  • In a small bowl, combine ricotta cheese, half of the mozzarella, Italian seasoning, salt, and pepper.
  • Once the noodles are ready, stir in the spinach and the ricotta mixture. Allow it to heat through for another 2-3 minutes.
  • Serve hot, top with the remaining mozzarella and a sprinkle of Parmesan.

Notes

Feel free to customize with additional vegetables or spices. Store in an airtight container in the fridge for up to 3-4 days.
