Ingredients

Dough and Fillings

  • 1 pound pizza dough or store-bought bread dough Soft and easy to work with; use whole wheat dough for a healthy option.
  • 2 cups shredded mozzarella Sub: provolone or mild cheddar for a sharper flavor.
  • 1/2 cup grated Parmesan Sub: nutritional yeast for a dairy-free cheesy flavor.
  • 4 tablespoons unsalted butter, softened Sub: olive oil for a lighter option.
  • 4 cloves garlic, finely minced Roasted garlic gives a sweeter, milder profile.
  • 2 tablespoons chopped fresh parsley Sub: basil or chives.
  • 1/2 teaspoon dried oregano Optional, for Italian warmth.
  • to taste salt and freshly ground black pepper

Optional Fillings

  • cooked and chopped spinach For a hearty meat-free filling.
  • crumbled cooked sausage For a meaty filling.
  • diced roasted red peppers For sweetness and flavor.
  • sliced olives For briny contrast.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Make the garlic butter: stir softened butter, minced garlic, parsley, oregano, and a pinch of salt together until smooth.
  • Roll out the dough on a lightly floured surface into a rectangle about 12 by 8 inches. Brush the surface lightly with half the garlic butter.
  • Sprinkle the mozzarella and Parmesan evenly over the dough, leaving a 1/2-inch border. Add any optional fillings in an even layer.
  • Starting at a long edge, roll the dough tightly into a log. Pinch the seam to seal. Slice the log into 8 even rolls and place them cut-side up on the baking sheet.
  • Brush the tops with the remaining garlic butter and a little extra Parmesan.

Baking

  • Bake for 18–22 minutes, until golden brown and bubbling.
  • Let cool for 5 minutes, then serve warm.

Notes

For storage, keep cooled rolls in an airtight container for up to 3 days; reheat in a 350°F oven for 8–10 minutes.
