  • 1 lb Pizza Dough Use store-bought or homemade; gluten-free option available.
  • 1 cup Pepperoni Sliced; can substitute with salami or turkey pepperoni.
  • 1.5 cups Mozzarella Cheese Shredded; mix in provolone or cheddar for added flavor.
  • 0.5 cup Parmesan Cheese Grated.
  • 1 teaspoon Garlic Powder For additional flavor; fresh minced garlic can be used.
  • 1 teaspoon Italian Seasoning Adds Mediterranean flavor; optional if using flavored dough.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Roll out the pizza dough on a lightly floured surface to create a rectangle, about ¼ inch thick.
  • Cut the dough into squares, approximately 4×4 inches each.

Filling

  • In a bowl, combine pepperoni, mozzarella, Parmesan, garlic powder, and Italian seasoning.
  • Stir until the filling mixture is well blended.

Assembly

  • Place a generous tablespoon of the filling mixture in the center of each dough square.
  • Fold the corners of each square towards the center, sealing the filling inside.
  • Press down the edges with a fork for an extra seal.

Baking

  • Lightly brush the tops of the pockets with olive oil.
  • Bake in the preheated oven for 15 minutes or until puffed and golden brown.
  • Let cool for a few minutes before serving.

Notes

Spice it up with red pepper flakes or add veggies like bell peppers or mushrooms. Serve with marinara sauce or ranch dressing.
