Instructions
 

Preparation

  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until fragrant and translucent — about 3-4 minutes.
  • Add the ground beef (or sausage) to the pot, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Season with salt and pepper.

Cooking

  • Stir in the crushed tomatoes and chicken broth. Let it simmer for a moment.
  • Sprinkle in Italian seasoning, stirring to combine. Let it simmer for another 2-3 minutes.
  • Add your broken lasagna noodles to the pot. Cook according to package instructions, about 10 minutes, until the noodles are tender.
  • Once noodles are cooked, remove the pot from the heat. Stir in the ricotta, mozzarella, and Parmesan cheese until everything is wonderfully melted.

Serving

  • Ladle the Cheesy Lasagna Soup into bowls, garnishing with fresh basil if desired.

Notes

For a veggie option, add spinach or kale during the last few minutes. Add red pepper flakes for extra spice. Use gluten-free pasta or zucchini noodles for healthier choice.
