Ingredients

Main ingredients

  • 20 oz Frozen hash browns These save time; use fresh if you prefer.
  • 2 cups Sharp cheddar cheese, shredded Swap for a white cheddar for a subtle twist.
  • 6 large Eggs They bind the mixture together; consider using egg whites for a lighter option.
  • 1 cup Sour cream Adds creaminess; Greek yogurt makes a healthier choice.
  • 0.5 cup Milk Whole milk adds richness, but low-fat or plant-based milk can work here.
  • 1 cup Green onions, chopped For freshness; chives can be a delightful substitute.
  • 1 tsp Garlic powder Enhances flavor; you might also use fresh minced garlic for depth.
  • Salt and pepper Essential for seasoning; don’t skip this!

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the frozen hash browns, half of the cheddar cheese, sour cream, milk, and eggs. Season generously with salt, pepper, and garlic powder.
  • Fold in the green onions.
  • Transfer the mixture into a greased 9×13 baking dish and spread it out evenly.
  • Top with the remaining cheddar cheese.

Baking

  • Bake in the preheated oven for 35-40 minutes, or until the top is golden and bubbly.
  • Let it cool for a few minutes before slicing into squares.

Notes

For healthy swaps, use sweet potatoes instead of regular hash browns. You can add veggies like bell peppers or spinach for extra nutrients and flavor, or mix in some diced jalapeños for heat.
