  • In a large pot, brown the ground beef over medium heat until no longer pink. Drain excess fat.
  • Add the diced onion, carrots, and celery to the pot, cooking for about 5 minutes until softened.

  • Add the diced potatoes and chicken broth, bringing the mixture to a gentle boil. Season with salt and pepper.
  • Reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  • Stir in the cream cheese until melted and creamy, followed by the shredded cheddar cheese until fully incorporated.
  • Taste and adjust seasonings as necessary before serving hot.

Notes

For a lighter version, use turkey or chicken instead of beef. You can also add broccoli or cauliflower for extra nutrients. Leftovers can be refrigerated or frozen for later use.
