  • 1 large brioche bun Soft and buttery, it serves as the perfect base.
  • 2 slices cheddar cheese Opt for sharp for a bolder flavor.
  • 1 piece egg A runny yolk adds richness; consider using an organic option for better taste.
  • 2 slices crispy bacon For that delicious crunch and savory flavor. Swap with turkey bacon or a veggie alternative for a healthier option.
  • 1 tablespoon chipotle sauce Adds a smoky heat; use less if you prefer a milder flavor.
  • 1 tablespoon butter For toasting the bun, enhancing that golden-brown crust.

  • In a skillet over medium heat, cook the bacon slices until crispy. Remove and set aside on paper towels.
  • In the same skillet, crack the egg and cook it sunny-side up, about 3-4 minutes until the whites are set and the yolk remains runny.
  • While the egg cooks, spread butter inside the brioche bun and toast it cut-side down in the skillet until golden brown, about 2 minutes.
  • On the bottom half of the toasted bun, layer one slice of cheddar cheese, followed by a slice of bacon, the sunny-side-up egg, and drizzle the chipotle sauce on top. Add the second slice of cheese for extra creaminess.
  • Place the top half of the bun on the sandwich and press gently. Optionally, place the assembled sandwich back in the skillet for another minute to melt the cheese further.

Notes

Consider using sautéed mushrooms or spinach for a vegetarian version. Add pickled jalapeños for extra kick and texture. Use whole grain bread and swap the egg for avocado for a lighter option.
