Main Ingredients

  • 2 cups cooked chicken, shredded or diced Leftovers work wonderfully
  • 2 cups fresh or frozen broccoli florets For vibrant color and crunch
  • 1.5 cups cooked rice White or brown, whichever you prefer
  • 1 can cream of chicken soup Or a homemade equivalent for a fresher taste
  • 1 cup shredded cheddar cheese Feel free to mix in mozzarella for a gooey factor
  • 0.5 cups milk Or a dairy-free alternative
  • 0.5 tsp garlic powder For that comforting baseline flavor
  • Salt and pepper To taste
  • French fried onions Optional for a crunchy topping

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease a 9x13-inch casserole dish with cooking spray or butter.
  • In a large bowl, combine cooked chicken, broccoli, cooked rice, cream of chicken soup, milk, garlic powder, salt, and pepper. Stir until well-mixed.
  • Gently fold in ¾ cup of shredded cheddar cheese, reserving the remaining cheese for topping.
  • Pour the mixture into the prepared casserole dish, spreading it evenly.
  • Sprinkle the remaining cheese over the top, and optionally add French fried onions.
  • Bake for approximately 30 minutes, or until bubbly and golden on top.
  • Let it cool for a few minutes before serving.

Notes

You can make this ahead by assembling a day in advance and refrigerating. Enhance with fresh herbs for additional flavor, and don’t overcook the broccoli.
