Main Ingredients

  • 2 cups cooked chicken, shredded Use rotisserie chicken for a super quick option!
  • 1 cup white rice Can substitute with brown rice for a healthier option. Just increase the cooking time!
  • 2 cups chicken broth Feel free to use low-sodium.
  • 1 can cream of chicken soup Homemade versions work well too!
  • 1.5 cups shredded cheese Cheddar is classic, but feel free to experiment with mozzarella or pepper jack!
  • 1 cup frozen mixed vegetables Carrots, peas, and corn give a nice pop of color.
  • 1 teaspoon garlic powder A pinch of onion powder can add depth.
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish) A sprinkle adds a lovely touch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the cooked chicken, rice, chicken broth, cream of chicken soup, shredded cheese, frozen vegetables, garlic powder, salt, and pepper. Stir until everything is well combined.
  • Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.
  • Cover the baking dish tightly with aluminum foil.

Baking

  • Bake in the oven for about 30 minutes.
  • Remove the foil and bake for an additional 10 minutes.
  • Let it cool for a few minutes before serving. Garnish with freshly chopped parsley.

Notes

You can make this casserole ahead of time and refrigerate it overnight. It can also be frozen for up to three months. Reheat directly from frozen in the oven.
