  • 1 cup uncooked white rice The base of the casserole.
  • 2 cups chicken broth For cooking the rice.
  • 1 cup cheddar cheese Shredded; can substitute with Monterey Jack or mozzarella.
  • 1 cup sour cream Greek yogurt can be used for a lighter option.
  • 1 cup frozen mixed vegetables Choose from carrots, peas, and corn.
  • 1 teaspoon garlic powder For flavor enhancement.
  • Salt and pepper to taste To season.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, uncooked rice, chicken broth, sour cream, garlic powder, salt, and pepper.
  • Gently fold in the frozen mixed vegetables.

Baking

  • Pour the mixture into a greased 9x13-inch baking dish and spread it out evenly.
  • Sprinkle the shredded cheddar cheese generously over the top.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Serving

  • Let it sit for about 5–10 minutes before serving.

Notes

For added crunch, top with crushed tortilla chips or breadcrumbs. You can also experiment with different cheeses for unique flavors.
