  • 1/2 cup sour cream Greek yogurt makes a fantastic substitute for a lighter option.
  • 1 cup milk Whole milk works best for creaminess; you can use almond milk for a dairy-free version.
  • 1/2 cup breadcrumbs Panko breadcrumbs are a great option for extra texture.
  • 2 tablespoons butter For sautéing.
  • 1 clove garlic, minced A tiny bit of garlic adds aromatic warmth.
  • to taste salt and pepper Essential for bringing the flavors together.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Wash and cut the cauliflower into bite-sized florets.
  • Steam the cauliflower florets for about 5 minutes until slightly tender but still crisp.
  • In a skillet, melt the butter over medium heat, then add the minced garlic.
  • Add the sour cream and milk to the skillet, stirring until well combined.
  • Stir in 3/4 cup of the shredded cheese and season with salt and pepper until the sauce is creamy.
  • Combine the steamed cauliflower florets with the cheese sauce in a large mixing bowl, tossing gently to coat.
  • Transfer the mixture to a 9x13-inch baking dish, spreading it out evenly.

Baking

  • Sprinkle the remaining cheese on top, followed by the breadcrumbs.
  • Bake in the preheated oven for 25-30 minutes until bubbly and golden brown.
  • Let it cool for a few minutes before serving warm.

Notes

Feel free to add cayenne or paprika for spice, toss in veggies, or mix in fresh herbs for added flavor. It also freezes well! Store leftovers in airtight containers for up to 3 days or freeze for 2 months.
