  • 2 cups cooked rice (white or brown) Use cooked rice for best results.
  • 2 cups broccoli florets Frozen is acceptable for convenience.
  • 1 cup shredded cheddar cheese Feel free to use a blend of cheeses.
  • 1 cup milk Dairy or non-dairy alternatives work well.
  • 1/2 cup onion, finely chopped Sweet onions like Vidalia are recommended.
  • 2 cloves garlic, minced
  • 1/4 cup butter For sautéing.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika Optional for a hint of warmth.
  • 1/4 cup breadcrumbs Optional, for topping.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium saucepan, melt the butter over medium heat. When it begins to bubble, add the chopped onion and sauté until translucent (about 3-5 minutes). Add minced garlic and cook for another minute.
  • Stir in the cooked rice, broccoli, milk, half of the cheddar cheese, salt, pepper, and paprika. Mix until well combined.
  • Pour the mixture into a greased 9x13 inch baking dish and spread evenly. Top with the remaining cheddar cheese and breadcrumbs if using.
  • Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
  • Remove from oven and let it cool for 5 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F or in the microwave.
