  • 1 teaspoon Chinese five-spice The perfume of the dish.
  • 3 cloves Garlic Minced.
  • 1 tablespoon Fresh ginger Grated.
  • 2 tablespoons Shaoxing wine or dry sherry Substitute with dry white wine or chicken broth.
  • 1 teaspoon Toasted sesame oil For finishing aroma.
  • 1 tablespoon Rice vinegar Balances the sweetness.
  • 1 teaspoon Cornstarch slurry 1 teaspoon cornstarch + 2 teaspoons water to thicken glaze.

Preparation

  • Mix the marinade: In a bowl combine hoisin, soy sauce, honey, five-spice, garlic, ginger, Shaoxing wine, sesame oil, and rice vinegar. Taste the mix—sweet, savory, and bright should dance on your tongue.
  • Marinate the chicken: Place chicken thighs in a zip-top bag or shallow dish and pour two-thirds of the marinade over them. Reserve the rest for glazing. Massage the marinade into the chicken, seal, and refrigerate for 30 minutes to overnight.

Cooking

  • Preheat the oven to 425°F (220°C) and line a baking tray with foil or a wire rack. Let the chicken come close to room temperature while the oven heats.
  • Roast: Arrange the thighs skinless-side up on the rack. Roast for 15–20 minutes, then brush with reserved marinade and return to the oven for 8–10 minutes. Broil for 1–2 minutes if you want charred edges—watch closely to prevent burning.
  • Finish: Rest the chicken for 5 minutes, then brush with a quick cornstarch-thickened glaze (mix the reserved marinade with cornstarch slurry, simmer to thicken) for extra shine. Slice and serve.

Notes

For a faster finish, try air-frying at 400°F for 12–15 minutes, flipping halfway through. Use chicken breast and reduce honey for a healthier option. Add orange marmalade for a festive twist, or try vegetarian options like king oyster mushrooms.
