Preparation

  • Start by removing the leaves and stem from the cauliflower. Chop it into quarters and place those pieces in a food processor. Pulse until the cauliflower resembles rice or couscous, or grate using a box grater.

Cooking

  • In a large skillet over medium heat, warm the olive oil. Once hot, add the minced garlic, sautéing for about 30 seconds, or until fragrant.
  • Add the prepared cauliflower rice to the skillet. Stir it in with the garlic, seasoning with salt and pepper. Gently sauté for 5-7 minutes until tender.
  • Squeeze in the lemon juice and mix well for brightness.
  • If using herbs, toss them in just before serving to maintain their vibrancy.

Notes

Consider adding greens like spinach or kale for extra nutrition. For added spice, incorporate ground cumin or curry powder during cooking. Experiment with nuts or seeds for added texture.
