Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Bring a large pot of water to a boil, then add the cauliflower florets and let them cook for about 5 minutes. Drain and set aside.
  • In a large bowl, whisk together sour cream, cheese (reserve a bit for the top), garlic powder, salt, and pepper until smooth.
  • Fold in the cooked cauliflower until it is well-coated with the sauce.
  • Pour the cauliflower mixture into a greased casserole dish, smoothing it out evenly.
  • In a small bowl, melt butter and mix with breadcrumbs, then sprinkle over the casserole. Top with remaining cheese.

Baking

  • Bake for about 30 minutes, or until bubbly and golden brown.

Notes

This casserole can be prepared in advance and is make-ahead friendly. You can assemble and refrigerate a day in advance. Don't skip the cheese topping for irresistible flavor.
