Ingredients
  

Salad Base

  • 4 cups Mixed Greens (baby spinach, arugula, romaine) Rinse and spin dry before use.

Fruits

  • 1 cup Fresh Berries (strawberries and blueberries) Slice strawberries before adding.

Dairy

  • 4 oz Goat Cheese Can substitute with feta cheese.

Nuts

  • 1/2 cup Nuts (pecans or walnuts) Toast for added flavor.

Dressing

  • 1/4 cup Apple Cider Vinaigrette Adjust quantity to taste.

Instructions
 

Preparation

  • Rinse the mixed greens gently under cold water and spin them dry in a salad spinner. Place them in a large salad bowl.
  • Slice your strawberries and toss them along with whole blueberries into the greens.
  • Crumble the goat cheese over the top of the salad.
  • Sprinkle your choice of nuts over the salad. If toasted, allow them to cool slightly before adding.
  • Pour the apple cider vinaigrette over the salad and toss gently.
  • Season with salt and freshly cracked black pepper to taste. Give one final toss and serve immediately.

Notes

This salad can be a side dish or a light main course. Store leftovers in an airtight container in the fridge for up to 2 days, keeping the dressing separate.
